When life gets hectic, my first instinct isn’t usually to tackle a complicated project.

Instead, I head for the kitchen.

There’s something comforting about cooking when everything else feels overwhelming. Maybe it’s the familiar routine. Maybe it’s the simple satisfaction of creating something with your hands. Or maybe it’s just the promise of a warm meal waiting at the end.

One recipe I find myself returning to again and again is:

Classic Aglio e Olio Pasta

Serves: 2–3 people
Prep Time: 5 minutes
Cook Time: 15 minutes

Ingredients

  • 8 oz (225 g) spaghetti or linguine
  • 6–8 cloves garlic, thinly sliced
  • ¼ cup (60 ml) extra-virgin olive oil
  • ½–1 teaspoon red pepper flakes (optional, for a little heat)
  • ¼ cup fresh parsley, finely chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ¼ cup grated Parmesan cheese (optional)
  • 2–3 tablespoons reserved pasta water

Instructions

1. Cook the pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook until al dente according to package directions.
  3. Before draining, reserve about ½ cup of the pasta water.
  4. Drain the pasta.

2. Prepare the garlic oil

  1. While the pasta cooks, heat the olive oil in a large skillet over medium-low heat.
  2. Add the sliced garlic.
  3. Cook gently for 2–3 minutes, stirring frequently, until the garlic becomes lightly golden.
  4. Add the red pepper flakes and cook for another 30 seconds.

Tip: Don’t let the garlic turn dark brown—it can become bitter very quickly.

3. Combine everything

  1. Add the drained pasta to the skillet.
  2. Toss well to coat the pasta in the garlic-infused oil.
  3. Add 2–3 tablespoons of reserved pasta water to help create a silky sauce.
  4. Stir in the parsley.
  5. Season with salt and black pepper to taste.

4. Serve

  • Transfer to serving bowls.
  • Top with Parmesan cheese if desired.
  • Serve immediately.

Optional Add-Ins

To make it a little heartier, you can add:

  • Grilled chicken
  • Shrimp
  • Crispy bacon
  • Mushrooms
  • Spinach
  • Cherry tomatoes
  • Lemon zest and a squeeze of lemon juice

Quick Flavor Boost

For a restaurant-style version:

  • Add 1 tablespoon butter with the olive oil.
  • Finish with lemon zest and freshly grated Parmesan.
  • Sprinkle extra parsley on top.

It’s not fancy. It won’t win any culinary awards.

But it feels like home.

As I measure ingredients and stir everything together, the noise of the day seems to quiet down for a little while.
